To prepare homemade Ghanaian salted beef, the fish is thoroughly cleaned and gutted. It is then seasoned with a mixture of salt and spices, such as ground pepper and garlic. The seasoned fish is left to marinate for a period of time to allow the flavors to penetrate the flesh.
After marination, the fish is typically sun-dried or air-dried until it becomes firm and dry. This drying process helps to preserve the fish and gives it a distinct texture. Once dried, the fish is ready to be used in various dishes.

Ingredients
  

  • 2 pounds beef (brisket or any suitable cut)

  • 1 cup kosher salt

  • 1 tablespoon ground ginger

  • 1 tablespoon ground cloves

  • 1 tablespoon ground cloves

  • 1 tablespoon ground coriander

  • 1 tablespoon ground coriander

  • Water for boiling

Instructions
 

  • Rinse the beef under cold water and pat it dry with paper towels. Cut the beef into large, manageable pieces.
  • In a mixing bowl, combine the kosher salt, ground ginger, ground cloves, ground allspice, ground coriander, and ground black pepper. Mix well to create a spice rub.
  • Rub the spice mixture all over the beef, ensuring that it's evenly coated. You can use your hands to massage the spices into the meat for better flavor penetration. Place the spiced beef in a large, resealable plastic bag.
  • Seal the bag, removing as much air as possible. Place the bag of beef in the refrigerator and let it marinate for at least 24 hours or up to 48 hours. The longer it marinates, the stronger the flavors will be.
  • After the marinating time has passed, remove the beef from the refrigerator and rinse off the excess salt and spices under cold water. Pat the beef dry with paper towels.
  • Fill a large pot with water and bring it to a boil. Add the beef to the boiling water and reduce the heat to low. Let the beef simmer gently for about 2-3 hours or until it becomes tender.
  • Once the beef is tender, remove it from the pot and let it cool. You can slice the beef into thin strips or chunks, depending on your preference.
