Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
- Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant.
- Add the sliced carrots, zucchinis, diced red and yellow bell peppers, cherry tomatoes, chopped spinach, and sliced mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
- Sprinkle the dried thyme, dried oregano, salt, and pepper over the sautéed vegetables. Stir well to combine and cook for an additional 2-3 minutes. Remove from heat.
- Transfer the cooked vegetables to the prepared baking dish, spreading them evenly.
- Sprinkle shredded mozzarella cheese (or your preferred cheese) evenly over the top of the vegetables.Optionally, sprinkle grated Parmesan cheese on top for additional flavor.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the vegetables are tender.
- Once done, remove the vegetable casserole from the oven. Garnish with fresh basil or parsley if desired before serving.
