Instructions
 

  • Heat the vegetable oil in a large pot over medium heat.Add the chopped onions and minced garlic to the pot. Sauté until the onions become translucent and the garlic is fragrant.
  • Add the diced tomatoes to the pot and cook for a few minutes until they start to soften.Stir in the ground paprika, cumin, coriander, and turmeric. Mix well to coat the vegetables with the spices.
  • Add the chopped leafy greens to the pot, a handful at a time, and stir to combine with the spices and vegetables.
  • Pour enough water into the pot to cover the vegetables. Season with salt according to your taste.
  • Cover the pot with a lid and let the Vegetable Ndiwo simmer for about 20-30 minutes, or until the greens are tender.
  • Stir the Ndiwo occasionally during cooking to ensure even heat distribution and to prevent sticking.
  • Once the vegetables are tender and the flavors have melded, remove the pot from the heat.
  • Serve the Vegetable Ndiwo hot as a main dish alongside steamed rice, ugali, or your preferred choice of starch.
