In a large bowl, combine the lemon juice, minced garlic, grated ginger, salt, black pepper, paprika, and cayenne pepper (if using). Mix well to create the marinade.
Add the meat to the marinade and coat it thoroughly. Allow the meat to marinate for at least 2 hours, or overnight in the refrigerator for maximum flavor absorption.
Preheat your grill or charcoal barbecue to medium-high heat.
Remove the meat from the marinade, shaking off any excess. Let it come to room temperature before grilling.
Lightly oil the grill grates to prevent sticking. Place the marinated meat onto the grill and cook for about 8-10 minutes per side, or until it reaches your desired level of doneness. Rotate the pieces occasionally to ensure even cooking.
Once the meat is cooked to your liking and has a nice char on the outside, remove it from the grill and let it rest for a few minutes.
Serve the Nyama Choma hot with your choice of accompaniments such as ugali, sukuma wiki, kachumbari, or other side dishes of your preference. You can also serve it with a spicy chili sauce or condiment if desired.
