Pork Katsu Curry Recipe

Equipment

  • Rice cooker

Ingredients
  

  • Berkshire Pork Boneless Chop
  • flour
  • eggs
  • Panko bread crumbs
  • white rice
  • Olive oil
  • Butter
  • whole wheat flour
  • Chicken or beef broth
  • Cayenne pepper
  • Japanese curry powder
  • Salt to taste
  • Water

Instructions
 

  • First of all let's prepare our rice
  • Rinse your rice with water 2 to 3 times and put it in the cooker or pot.
  • Add water to the rice( depending on the quantity of rice) and add salt to taste .
  • If using a rice cooker, place rice in the rice cooker and begin.
    If using a pot, allow the rice to come to a boil at medium heat.
    While rice is boiling, lower the heat and let rice simmer for few minutes.
    Once all water has dissipated, fluff rice and serve.
  • Let's prepare our Pork katsu:
  • Allow the boneless pork chop to defrost in the refrigerator for some hours.
  • In a bowl, place flour, eggs, and Panko bread crumbs in 3 separate bowls.
    Whisk the eggs.
  • Butterfly the pork chop & pat the pork chop dry.
  • Coat the pork chop with flour thoroughly.
    Afterwards thoroughly coat the pork chop(coated with flour) in egg.
    Thoroughly coat the pork chop in Panko bread crumbs
  • On medium heat, heat your pan a pour oil or butter in it.
  • Once the pan has come to temperature, place the pork chop in and begin to fry
  • Turn the pork chop only once and hold the pork chop vertically to sear all sides.
    Allow the pork chop to rest for some minutes before serving.
  • Lastly our curry.
  • In another pot, drizzle in oil or butter and turn the heat up to a low temperature.
  • Melt butter, and whisk flour in gradually.
    Whisk in Japanese curry powder and cayenne pepper.
    Add chicken or beef broth and soy sauce. Stir as you add the broth
  • Increase the heat to medium heat and continue to stir until sauce thickens and add salt to taste
  • And our meal is ready!!

Notes

I really like to prep my meat and season with salt for about 2 to 4 hours. This really allows the salt to penetrate the pork so it’s super flavourful throughout. 
And you can just imagine the taste it comes out with when done.
