Tostadas De Tinga

INGREDIENTS
1 pound of skinless, boneless chicken thighs or breasts
one sliced onion
2 minced garlic cloves
one tomato chopped in a can
2 to 3 chopped chipotle chiles in adobo sauce
1 tablespoon of chipotle chiles in adobo sauce
Oregano, dry, 1 teaspoon
smoked paprika, 1 teaspoon
pepper and salt as desired
Vegetable oil, 1 tablespoon
(Either store-bought or home-made) tostada shells
HOW TO PREP
Heat a skillet with a vegetable oil of choice then go ahead to with your chicken on medium heat. Once it is cooked on both sides, make sure both sides are brown, set it aside. This will take 4-5 minutes.
In the same skillet, prepare your adobo sauce with dried oregano, smoked paprika, sliced tomatoes, chopped chipotle chiles, salt, and pepper. After combining, boil the sauce for a few minutes.
Shred the chicken using a fork and add it to your sauce. Let it simmer for 3-5 minutes. Spread a teaspoon of the chicken tinga mixture on top of a tostada shell. Add your chosen garnishes, such as a squeeze of lime juice, shredded lettuce, cubed avocado, crumbled queso fresco, and chopped cilantro.
Serve and enjoy!
