What is Pap?
Pap is a maize dish usually prepared by Africans, especially South Africans. The word ‘pap’ originates from Dutch which means merely porridge. It can be made soft or stiff depending on the consistency preferred by the consumer.
Pap can be enjoyed at any time of the day you want.
Today, we will learn how to make this simple African dish called pap in its basic form.
Ingredients for making pap meal
- 3 cups of water
- 2 cups of maize meal
- 2 tablespoons of butter
What Pap Can Be Served With
Pap can be served with vegetables, meat, meat stew, tripe stew, chicken stew or fish.

- Wooden spoon
Steps to cook Pap with Rama
- Pour three cups of water into a saucepan and boil.
- Add half of the milled maize or maize meal to the water and cover with a lid.
- Cook on low heat for about ten minutes.
- Remove the lid and stir quickly and continuously for about a minute.
- Add the rest of the milled maize slowly and stir continuously and quickly for a while.
- Mash the maize mixture on the side of the sauce pan using the wooden spoon. Do this continuously for some time.
- Leave it to steam for about 10-15 minutes.
- Remove the lid and stir. Add a little more water if the pap is too dry for you.
- Add butter to pap and stir.
- Serve with your choice stew or vegetables.
