Instructions
- Make ready all your ingredients and then combine all the marinade ingredients in a large bowl.
- You then place the beef to be roasted in the marinade, ensuring it's fully submerged and marinate in the refrigerator for at least 2 days, turning the meat occasionally before using it for the dish
- When done marinating, remove the beef from the marinade and pat it dry.
- Now, preheat the oven and in a large oven-safe pot, heat the vegetable oil over medium-high heat. Brown the beef on all sides and add the chopped onions, carrots, celery, and garlic to the pot. Cook until the vegetables are softened and then pour in the red wine vinegar, red wine, and beef broth. Add bay leaves and peppercorns or cayenne pepper and bring the mixture to a simmer.
- Cover the pot and transfer it to the preheated oven. Braise the beef for about 3-4 hours or until it's tender. You can check for doneness by inserting a fork; it should go in easily through the meat.
