Ingredients
- Fish fillets cut into chunks
- Onion finely chopped
- Garlic minced
- Carrots diced
- Celery stalks sliced
- Diced tomatoes
- Fish or vegetable broth or water
- White wine
- Bay leaf
- Thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Make ready all your ingredients and in a large pot, heat a small quantity of water over medium heat and then add in your fish, salt and pepper. When the fish is done cooking, remove it and place it in a different bowl and then remove the bones from it.
- Now add in the chopped onions, minced garlic, diced carrots, sliced celery stalk and the diced tomatoes. Stir after each addition and then add in your wine and allow to cook for a minute or two until softened.
- Add the cooked fish, bay leaf, and dried thyme. Bring to a simmer and let it cook for about 10 minutes or until the fish flakes easily and then season with salt and pepper to taste.
- Remove the bay leaf, taste and adjust seasoning if needed.
- Serve soup hot, garnished with fresh parsley.
