Fried potatoes with vegetables recipe
Ingredients
- Potatoes 2-3, peeled and sliced
- Bell peppers
- Onions diced
- Garlic minced
- Brussels sprout
- Tomatoes diced
- Spinach
- Zucchini chopped
- Olive oil or vegetable oil
- Salt and pepper to taste
- Paprika or your preferred spices
Instructions
- Gather all your ingredients and prep your vegetables. Wash potatoes in a clean water, peel and then slice. You then heat oil in a pan over medium heat, and add in your sliced potatoes and cook until they start to brown and become crispy and then remove it and place them in a bowl. Now add in your onions, and garlic, cook until fragrant.
- Add the chopped vegetables starting with the harder ones and add the remaining. Continue cooking until they're tender but still crisp.
- And then season with salt, pepper, and paprika and any additional spices for flavor.
- Stirring occasionally to ensure even cooking.
- You then add the crispy potatoes to it and then stir it all together for a minute or two.
- After everything is cooked to your liking, remove from heat and serve.
