Quarkkeulchen is one of my favorite desserts and I learned how to make this from my childhood friend who came from Germany some months ago. This friend of mine kept craving this delicious delicacy until we both decided to make it finally and I loved it so much that we made and ate it often. This dessert is served as a sweet snack or as part of a light meal. These pancakes are typically enjoyed warm, straight from the frying pan, when they’re crispy on the outside and soft on the inside. Traditionally, they are served during various occasions, including festive seasons like Christmas markets in Germany, where they are a popular treat. Quarkkeulchen can also be enjoyed throughout the year, either as a comforting dessert after a meal or as a delicious snack during the day. In other words, you can make and enjoy it at your own convenience.

Quarkkeulchen, also known as "Quarkkäulchen," is a traditional German dish, popular in Saxony. These are small, round pancakes or cakes made from a mixture of quark (fresh cheese), flour, eggs, and sugar. They are mostly incorporated with additional ingredients like raisins or sultanas and typically fried until golden brown. The mixture is shaped into small, flattened patties and then fried in oil or butter until they develop a crispy, golden exterior.
The dish has regional variations in Germany.

Ingredients
  

  • 1000 g wheat flour
  • 2 eggs
  • 500 g low-fat quark fresh cheese
  • A pinch of salt
  • 300 g raisins or sultanas
  • 200 g sugar
  • Cinnamon sugar for sprinkling
  • Cooking oil for frying

Instructions
 

  • In a mixing bowl, mix the wheat flour, egg, low-fat quark, sugar, raisins or sultanas, and a pinch of salt. Use a hand mixer or spatula to mix the ingredients until well combined and batter forms smoothly.
  • The batter should have a consistency that allows it to be shaped easily.
  • Heat cooking oil in a pan over medium heat and then with a large spoon or scoop, place portions of the batter, that is the prepared mixture into the pan and flatten the batter portions to approximately 1 cm thickness using the back of the spoon.
  • Fry the quark pancakes for about 3 minutes on each side until they turn golden brown. You then remove the pancakes from the pan and place them on paper towels to absorb excess oil.
  • Sprinkle cinnamon sugar on the pancake while they're still warm and serve warm as a delicious treat.
