Savory crepes recipe
Savory crepes are pancakes made from a batter of flour, eggs, milk, and seasoning, but unlike their sweet counterparts, these crepes are filled with savory ingredients. The batter itself is not sweetened, allowing for a more use in savory dishes. Savory crepes can be filled with various ingredients like cooked meats (chicken, ham, turkey), sautéed vegetables (spinach, mushrooms, bell peppers), cheeses, herbs, and sauces. They are folded or rolled around the filling to create a flavorful and satisfying meal or appetizer, providing a blend of flavors in each bite.
Ingredients
For the pancakes
- All-purpose flour
- Milk
- Eggs
- Melted butter
- Salt
- Black pepper
For the savory filling, as you will prefer
- Cooked chicken ham, turkey, or vegetables (like sautéed spinach, mushrooms, bell peppers, etc.)
- Grated cheese cheddar, Swiss, mozzarella, etc.
- Herbs and spices like basil, oregano, or paprika
- Bechamel sauce or cream cheese optional
Instructions
- In a sizeable bowl, combine the flour, salt, and pepper. Gradually add in the milk, melted butter, and whisk in the eggs until a smooth batter forms. Allow the batter rest for about 15 minutes.
- Heat a crepe pan having some butter or oil smeared into it over medium heat. Add a small quantity of the batter into the center of the pan and quickly swirl it around to spread the batter evenly into a thin circle. Cook until the edges start to lightly brown. Flip the crepe using a spatula and cook the other side for another minute until golden.
- Repeat the process with the remaining batter, stacking the cooked crepes on a plate and covering them with a clean kitchen towel to keep them warm.
- For the savory filling, lay out a crepe, spread a thin layer of bechamel sauce or cream cheese, add your preferred cooked meat, vegetables, cheese, herbs, and spices at the center of the crepe.
- Fold or roll the crepe over the filling, getting a cylinder shape and then put the filled crepes back into the skillet for some seconds to warm them and melt the cheese.
- Serve the savory crepes warm as a delicious meal or appetizer.
