Leaf brittle recipe
Leaf brittle typically refers to a crunchy and thin sweet treat made from various edible leaves, such as spinach, kale, or other greens. The leaves are coated in a sugary syrup, baked until crisp, and then broken into pieces resembling brittle candy. It's a creative way to incorporate greens into a sweet snack by combining the natural flavors of the leaves with the sweetness of the brittle.
Ingredients
- 1 cup fresh clean edible leaves (spinach, kale, Swiss chard, etc.)
- ½ cup granulated sugar
- ¼ cup water
- 1 teaspoon vanilla or any preferred extract optional
- Oil for greasing
Instructions
- Gather all your ingredients. Preheat your oven to 275°F (135°C). Grease a baking sheet with oil.
- Grab your leaves and wash the edible leaves very well and pat them dry using paper towels or a clean kitchen towel ensuring the leaves are completely dry to prevent any moisture or liquid in the brittle.
- Heat a saucepan over medium heat and combine the granulated sugar, vanilla extract and water. Stirring continuously until the sugar dissolves completely.
- Then add the edible leaves to the sugar syrup and let them simmer for a few minutes, stirring gently. This allows the leaves to absorb the syrup.
- Use tongs or a slotted spoon to remove the leaves from the syrup and place them in a single layer on the prepared baking sheet. Make sure to leave some space between the leaves and then bake the leaves in the preheated oven for about 20 minutes or until they are dried and crispy. Keeping close eye on them to prevent burning.
- The moment the leaves are crisp, remove the baking sheet from the oven and let the leaves cool completely. They will become even crispier as they cool down.
- Your leaf brittle is ready.

After everything, you can break the brittle into smaller pieces or leave it as it is and store the leaf brittle in an airtight container at room temperature.
