Pointed cabbage stew with minced meat recipe

So lovely people, I will share a recipe I copied from my favorite guardian some years ago. She used to prepare this stew with so much love and so much caution, being careful at every step of the way. The resulting stew was so delicious that I could eat and eat it for the entire day and even ask for more. Pointed cabbage stew with minced meat recipe

Pointed cabbage, also known as cone, sweetheart, hispi, or sugarloaf cabbage is an F1 hybrid form of cabbage with a tapering shape and large delicate leaves varying in color from yellowish to blue-green. It tastes less pronounced and more delicate than common white cabbage. It is the earliest cabbage, grown for sale in the UK from May to November, but it is grown in Spain from November to April. Production of pointed cabbage is decreasing because white cabbage produces higher yields and is easier to process due to its round shape.
Pointed cabbage can be used like Savoy or white cabbage, but it needs less cooking because of its more delicate leaves. It can also be eaten raw and is suitable for salads.

Ingredients
  

  • 2 tablespoon olive oil
  • 2 onions finely chopped and cut into cubes
  • 4 cloves garlic minced
  • 2 ta meat stock of your preference
  • 2 pounds of 450g +450g minced meat (beef, pork, turkey, or chicken)
  • 2 pointed cabbage thinly sliced
  • 2 cans 14 oz diced tomatoes or tomato paste
  • 2 teaspoon paprika powder hot
  • 2 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cups 480ml vegetable or beef broth or water

Instructions
 

  • Gather all your ingredients and heat the olive oil in a casserole dish or skillet over medium heat. Fry the finely chopped onions and cook until translucent for some minutes. Add the minced garlic and cook for an additional minute making sure not to burn it. Add the diced tomatoes (with their juices) or the tomato paste at this point, paprika, dried thyme, salt, and pepper. Mix well to combine.
  • Afterward, add the minced meat to the pot, breaking it apart with a spoon. Cook until the meat is browned, stirring occasionally.
  • Stir in the sliced pointed cabbage by spreading it on the meat and cook for about 5 minutes until it begins to wilt.
  • Pour in the vegetable or beef broth or some water and bring the mixture to a simmer. Reducing the heat to low and covering the pot, allow the stew to simmer for about 15 minutes or until the cabbage is tender and the flavors have melded together.
  • Taste it and add in more paprika powder, pepper, and if necessary some salt.
  • Now, your pointed cabbage stew with minced meat is well-cooked, and it's done for you. Once done, serve the cabbage stew with minced meat hot, garnished with fresh parsley if you'd want it. This stew pairs well with crusty bread or rice.
