Spätzle is a German egg noodle pasta with a chewy, dumpling-like texture. The short noodles are usually irregularly shaped and made from a simple batter of eggs mixed with flour (all-purpose or semolina) and milk or water. Cheese Spaetzle however is a beloved German dish consisting of soft egg noodles or dumplings (spaetzle) that are typically boiled and then pan-fried until golden and slightly crispy. The cooked spaetzle are combined with grated cheese (often Emmental, Gruyère, or another type of Swiss cheese) and sometimes caramelized onions or crispy bacon. The mixture is heated until the cheese melts and coats the noodles, creating a creamy food dish. It's a popular dish in Germany and neighboring countries, often served as a satisfying main course or side dish.

Ingredients
  

  • 400 g fresh or dried spaetzle noodles homemade or store-bought
  • 2 tablespoons unsalted butter
  • 1 cup of white onion finely chopped
  • - 200g grated cheese Emmental, Gruyère, or Swiss cheese Begin with 100g of the emmental cheese cheese and later use 100g of Gruyere cheese.
  • Salt
  • Optional: Crispy bacon bits chives, or parsley for garnish

Instructions
 

  • Gather all your ingredients and if using dried spaetzle, cook them according to package instructions. If using fresh spaetzle, you can proceed directly to the next steps.
  • Afterwards, heat butter or olive oil in a large skillet or frying pan over medium heat and caramelize the onions that it stir fry it until it becomes golden brown. So add the chopped onion to the pan and sauté until it becomes soft and translucent.
  • Once the onions are cooked, and everything is still hot, stir the cooked spaetzle to the skillet having the onions. Stir gently to combine with the onions and then sprinkle the grated cheese over the spaetzle and onion mixture. Stir continuously until the cheese melts and coats the noodles, creating a creamy texture. If the cheese doesn't melt completely, cover and transfer it to a warm oven for a few minutes.
  • Season with salt and pepper according to your taste preference. Pepper can however be omitted. Stir to incorporate the seasoning.
  • Optional: For extra flavor, you can add crispy bacon bits or garnish with chopped chives or parsley. Cook for an additional minute or two until everything is heated through and well combined.
  • Remove from heat and serve the Cheese Spaetzle hot directly from the pan as a main course or a comforting and delicious side dish.
