Growing up we ate a lot of tomato soup coupled with tons of saltine crackers or with a grilled cheese sandwich. Mom would always buy “that” canned tomato soup, you know the one I am talking about with the red and white label, full of high fructose corn syrup and other hard-to-pronounce ingredients.
I readily admit, I loved that soup. I grew up on that soup like a lot of people. It wasn’t until I went Whole Foods Plant Based that I realized how bad it is for you.

Tomato soup strained tomatoes recipe
Tomato soup made from strained tomatoes typically involves using tomatoes that have been peeled, seeded, and pureed or strained to remove any chunks or seeds, resulting in a smooth, consistency. This method creates a base for the soup that is incredibly smooth and free from any textured bits, giving it a silky texture. The strained tomatoes serve as the primary ingredient in the soup, often combined with other flavorings such as onions, garlic, herbs (like basil or thyme), broth, cream, or spices to enhance its taste profile.
Ingredients
- Olive oil
- Onion finely chopped
- Dried minced onions
- Garlic minced
- 28-ounce cans of strained tomatoes (Pomi Strained Tomatoes)
- Vegetable or chicken broth
- Sugar optional, to balance acidity
- Pinch black Pepper
- Salt to taste- Fresh basil leaves or dried basil for garnish optional
- Optional Toppings:
- Crushed red pepper flakes
- Chiffonade fresh basil
Instructions
- In a medium sized pot or Casserole dish, heat the olive oil over medium heat. Add in the chopped onion and sauté until it becomes soft and translucent, for some minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn it.
- Pour in the strained tomatoes and vegetable or chicken broth and stir. Bring the mixture to a gentle simmer.
- Add the optional sugar to balance the acidity of the tomatoes, if you want it. Season with salt and pepper according to your taste preferences. Let the soup simmer allowing the flavors to meld together.
- Stir in the heavy cream if you want your stew to be creamier at this stage. This step is optional and can be skipped if you do not want a thick soup. The moment the soup is done simmering and reaches your desired consistency, remove it from the heat. Transfer the soup in batches to a blender (allow it to cool slightly first if using a regular blender) and blend until smooth.
- Return the blended soup to the pot and reheat gently and serve the tomato soup hot, garnished with fresh basil leaves or a sprinkle of dried basil if you want.
