  • Large pot for boiling water
  • Large non-stick skillet or frying pan

Ingredients
  

  • flour
  • eggs
  • milk
  • salt
  • ground nutmeg
  • butter
  • onion
  • grated cheese
  • pepper
  • Chopped fresh parsley

Instructions
 

  • In a mixing bowl, combine the flour, eggs, milk, salt, and nutmeg (if using). Beat the mixture until smooth and slightly elastic. Let the dough rest for about 10-15 minutes.
  • Bring a large pot of salted water to a boil. If using a spaetzle maker, press the dough through the maker or use a colander with large holes to press the dough through into the boiling water, creating small dumplings. The spaetzle will rise to the surface when cooked, usually in about 2-3 minutes. Remove the cooked spaetzle with a slotted spoon and place them in a colander to drain.
  • In a large non-stick skillet or frying pan, melt 2-3 tablespoons of butter over medium heat. Add the finely chopped onion if using, and sauté until translucent and slightly caramelized (optional).
  • Once the onions are cooked (if using), add the drained spaetzle to the skillet with the melted butter. Toss the spaetzle gently in the butter, allowing them to heat through.
  • Sprinkle the grated cheese over the spaetzle in the pan. Stir gently until the cheese melts and coats the spaetzle evenly. Season with salt and pepper to taste.
  • Transfer the Cheese Spaetzle to a serving dish or individual plates. Garnish with chopped fresh parsley if desired and serve immediately while hot.
