- Preheat your oven to 325°F (165°C).Rinse the uncooked rice thoroughly under cold water.
- In a medium-sized saucepan, combine the rinsed rice and milk. Bring it to a gentle boil over medium heat, stirring occasionally to prevent the rice from sticking to the bottom.
- Once the milk begins to boil, reduce the heat to low. Stir in the granulated sugar, ground cinnamon, ground nutmeg, and vanilla extract. Let it simmer on low heat, stirring occasionally, for about 20-25 minutes or until the rice is tender and the mixture thickens.
- In a separate bowl, beat the eggs. Gradually add a small amount of the hot rice mixture to the beaten eggs while whisking constantly. This process, known as tempering, prevents the eggs from scrambling when added to the hot mixture.
- Pour the egg mixture back into the saucepan with the rice pudding, stirring continuously. This helps thicken the pudding further and creates a smooth consistency. Add raisins if desired.
