Instructions
- Rinse and thinly slice the cabbage. Chop the onion, dice the carrots and celery, and mince the garlic.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and minced garlic. Sauté until the onion turns translucent and the garlic is fragrant, about 2-3 minutes.
- Add the diced carrots and celery to the pot. Stir and cook for another 3-4 minutes until slightly softened.
- Add the thinly sliced cabbage to the pot, stirring occasionally, and cook for about 5-7 minutes until it begins to wilt.
- Pour in the diced tomatoes (with their juices) into the pot. Add the vegetable or chicken broth, paprika, dried thyme, bay leaf, salt, and pepper. Stir to combine.
- Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
- Taste the stew and adjust seasoning if needed. Add more salt, pepper, or herbs according to your taste preference.
- Once done, remove the bay leaf from the stew.Ladle the savory cabbage stew into bowls, garnish with chopped fresh parsley if desired, and serve warm.
