Ingredients
- large potatoes, peeled and thinly sliced
- minced beef
- garlic
- olive oil

Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
- Peel the potatoes and slice them thinly using a mandoline slicer or a sharp knife. Pat the potato slices dry with paper towels to remove excess moisture.
- Heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sauté until softened and fragrant.
- Add the ground/minced meat to the skillet, breaking it up with a spatula. Cook until browned, then season with paprika, dried thyme (if using), salt, and pepper. Set aside.
- In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously to form a roux.
- Gradually pour in the milk while whisking constantly to avoid lumps. Cook the sauce until it thickens and coats the back of a spoon.
- Stir in the grated cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
- Layer half of the sliced potatoes in the bottom of the prepared baking dish. Spread the cooked minced meat evenly over the potato layer.
- Pour half of the cheese sauce over the minced meat layer. Repeat with the remaining potatoes, then finish by pouring the rest of the cheese sauce over the top.
- Cover the baking dish with foil and place it in the preheated oven. Bake for about 45-50 minutes or until the potatoes are tender when pierced with a knife.
- Remove the foil and bake for an additional 10-15 minutes or until the top is golden brown and bubbly.
- Once done, remove the gratin from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley if desired before serving.
