Ingredients
  

  • all-purpose flour
  • granulated sugar
  • baking soda
  • large eggs
  • milk
  • vegetable oil

Instructions
 

  • Preheat your waffle iron according to its manufacturer's instructions.
  • In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well combined.
  • In a separate bowl, whisk the eggs until lightly beaten. Add the milk, vegetable oil (or melted coconut oil), and vanilla extract (if using). Whisk until well combined.
  • Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are okay.
  • Lightly grease the preheated waffle iron with a small amount of oil or cooking spray.Pour an appropriate amount of the waffle batter onto the center of the waffle iron (the amount will depend on the size of your waffle iron).
  • Close the lid and cook the waffles according to your waffle iron's instructions or until they are golden brown and crisp.
  • Once cooked, carefully remove the waffles from the waffle iron and place them on a plate.
  • Serve the butter-free waffles warm with your favorite toppings, such as fresh berries, maple syrup, honey, whipped cream, or yogurt.
