Eggnog Cake

Ingredients
- all-purpose flour
- baking powder
- baking soda

- rum

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground nutmeg. Set aside.In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.Gradually add the dry ingredients to the wet ingredients, alternating with the eggnog and rum (if using), mixing until just combined. Be careful not to overmix.
- Divide the batter evenly between the prepared cake pans.Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- Remove the cakes from the oven and allow them to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
- In a mixing bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, eggnog, vanilla extract, ground nutmeg, and a pinch of salt, beating until smooth and creamy. Adjust the consistency by adding more powdered sugar if needed.
- Once the cakes are completely cooled, place one layer on a serving plate.Spread a layer of eggnog frosting on top of the first cake layer.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining eggnog frosting.Optional: Sprinkle a little extra nutmeg on top of the frosted cake for decoration.
- For best results, refrigerate the cake for about 30 minutes to allow the frosting to set before slicing and serving.

- If you prefer a non-alcoholic version, you can omit the rum or bourbon from the cake batter.
