Ingredients
  

  • Maultaschen
  • olive oil
  • onion

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a casserole dish with butter or cooking spray.
  • Slice the Maultaschen into 1/2-inch pieces and set aside.In a large skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until softened.
  • Add diced red bell pepper, sliced mushrooms, and chopped spinach to the skillet. Cook until the vegetables are tender. Season with salt and pepper to taste.
  • In a saucepan, melt butter over medium heat. Add all-purpose flour and whisk continuously to make a roux. Cook for a minute to remove the raw flour taste.
  • Gradually pour in milk and chicken or vegetable broth while whisking continuously to avoid lumps.
  • Add ground nutmeg, salt, and pepper to the sauce. Cook and stir until the sauce thickens. Remove from heat.
  • Arrange half of the sliced Maultaschen at the bottom of the greased casserole dish.Spread half of the sautéed vegetable mixture over the Maultaschen layer.
  • Pour half of the prepared sauce evenly over the vegetables.Repeat the layers with the remaining Maultaschen, vegetables, and sauce.
  • Sprinkle shredded cheese evenly over the top layer of the casserole.Cover the casserole dish with aluminum foil and bake in the preheated oven for 25-30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown.
  • Once baked, let the casserole cool for a few minutes. Garnish with chopped parsley before serving.
