Herb Leaf Brittle
A crunchy and sweet brittle made with edible leaves, sugar, and nuts, offering a delightful combination of flavors and textures.

Ingredients
- granulated sugar
- water
- corn syrup
- salt
- unsalted butter
- vanilla extract
- edible leaves mint, basil, lemon verbena
- chopped nuts almond nuts, pecans, walnut
Instructions
- Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- Wash and thoroughly dry the edible leaves, ensuring they are completely dry before using.If using nuts, chop them into small pieces and set aside.
- In a heavy-bottomed saucepan, combine granulated sugar, water, light corn syrup, and salt over medium heat. Stir until the sugar dissolves.
- Insert a candy thermometer into the mixture and cook without stirring until the temperature reaches 300°F (150°C), which is the hard crack stage. This will take about 15-20 minutes.
- Once the sugar mixture reaches 300°F (150°C), remove the saucepan from the heat.
- Stir in the unsalted butter, baking soda, and vanilla extract. Be careful as it may bubble vigorously.
- Quickly add the mixed edible leaves and chopped nuts (if using) to the sugar mixture. Stir gently until the leaves are evenly coated.
- Pour the mixture onto the prepared baking sheet, spreading it out thinly and evenly using a spatula or the back of a spoon. Work swiftly as the mixture will begin to harden.
- Allow the leaf brittle to cool and harden completely at room temperature for approximately 30 minutes.
- Once hardened, break the brittle into pieces using your hands or by gently tapping it with a kitchen mallet or the back of a knife.

- Be cautious when working with hot sugar as it can cause severe burns. Handle it carefully and keep a safe distance from the hot mixture.
- Experiment with different edible leaves or even tea leaves to create unique flavor combinations.
- Store the leaf brittle in an airtight container at room temperature. Place parchment paper between layers to prevent sticking.
