Cheesy Bacon Stuffed Potatoes

Ingredients
  

  • russet potatoes
  • bacon
  • cheddarcheese
  • cour cream
  • unsalted butter
  • onion
  • salt and black pepper
  • parsley

Instructions
 

  • Preheat your oven to 375°F (190°C). Pierce each potato several times with a fork or knife.
  • Place the potatoes directly on the oven rack or on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
  • Once the potatoes are cooked, allow them to cool slightly until they are safe to handle.
  • Slice off the top quarter of each potato lengthwise. Using a spoon, carefully scoop out the flesh from the center of each potato into a mixing bowl, leaving a shell of about 1/4 inch thick. Set the potato shells aside.
  • To the bowl with the scooped potato flesh, add softened butter, sour cream, salt, and black pepper. Mash and mix everything together until smooth and creamy
  • Add crumbled bacon, shredded cheese, and sliced green onions (if using) to the mashed potato mixture. Mix well to combine all the ingredients.
  • Spoon the bacon and cheese filling back into each hollowed-out potato shell, mounding it slightly on top.
  • Place the stuffed potatoes back on the baking sheet and return them to the oven. Bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  • Once baked, remove the stuffed potatoes from the oven. Garnish with chopped fresh parsley or chives if desired before serving.
