Ingredients

Instructions
 

  • Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken breasts until they are about 1/4 inch thick. This helps tenderize the meat and ensures even cooking.
  • Season the chicken breasts with salt and pepper on both sides.Set up three shallow dishes: one with all-purpose flour, one with beaten eggs, and one with breadcrumbs.
  • Dredge each chicken breast in flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it thoroughly with breadcrumbs, pressing gently to adhere.
  • Heat vegetable oil or clarified butter in a large skillet over medium-high heat.Once the oil is hot, carefully add the coated chicken breasts to the skillet, working in batches if needed to avoid overcrowding the pan.
  • Cook the schnitzels for about 2-3 minutes on each side or until they turn golden brown and are cooked through. The internal temperature should reach 165°F (74°C).
  • Once cooked, transfer the schnitzels to a plate lined with paper towels to absorb any excess oil.
  • Serve the chicken minute schnitzel hot, garnished with fresh parsley (if using) and accompanied by lemon wedges for squeezing over the schnitzel.
