Easy Carrot Muffins

Ingredients

Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the muffin cups lightly with butter or cooking spray.
- In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger. Set aside.
- In another bowl, beat the eggs with granulated sugar and brown sugar until well combined and slightly fluffy.Gradually pour in the vegetable oil or melted butter and vanilla extract, mixing until incorporated.
- Add the grated carrots to the wet ingredients and stir until evenly distributed.Slowly add the dry ingredient mixture to the wet ingredients, mixing until just combined. Do not overmix.
- If using chopped nuts, gently fold them into the batter at this point
- Spoon the batter evenly into the prepared muffin cups, filling each cup about 2/3 full.
- Place the muffin tin in the preheated oven and bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Once done, remove the muffins from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Serve the carrot muffins warm or at room temperature. Store any leftover muffins in an airtight container at room temperature for up to 3-4 days.
