Instructions
- Cut the chicken into bite-sized pieces and season with salt and pepper.
- Heat vegetable oil or coconut oil in a large skillet or pot over medium heat.Add finely chopped onion and sauté until softened and translucent.
- Stir in minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add curry powder, ground turmeric, ground cumin, and ground coriander to the onion mixture. Stir and cook for a minute to toast the spices.
- Add the seasoned chicken pieces to the skillet, stirring to coat the chicken with the spices. Cook until the chicken is lightly browned on all sides.
- Pour in the coconut milk and chicken broth (or water) into the skillet, stirring to combine everything.
- If using tomato paste, add it now. If using diced tomatoes, add them to the skillet.Optionally, add diced potatoes or vegetables (such as bell peppers, carrots, or peas) to the curry.
- Bring the mixture to a gentle simmer. Reduce the heat to low and cover the skillet or pot with a lid.
- Let the chicken curry simmer for about 20-25 minutes or until the chicken is cooked through and tender, and the flavors have melded together. Stir occasionally.
- Taste and adjust the seasoning with salt and pepper if needed.Garnish the chicken curry with fresh cilantro before serving, if desired.
