- boneless chicken
- corn starch
- vegetable oil
- soy sauce
- paprika
- garlic
- vegetables

- In a mixing bowl, combine the chicken pieces with soy sauce, cornstarch, ginger-garlic paste, salt, and pepper. Mix well to coat the chicken evenly. Let it marinate for 15-20 minutes.
- In another bowl, whisk together soy sauce, chili sauce or sriracha, tomato ketchup, rice vinegar, brown sugar, and the cornstarch-water mixture until well combined. Set aside.
- Heat vegetable oil in a wok or skillet over medium-high heat. Add the marinated chicken pieces in batches and fry until golden brown and crispy. Remove the fried chicken and place it on a plate lined with paper towels to drain excess oil.
- In the same pan, add a little more oil if needed. Sauté diced onions, bell peppers, sliced green chilies, minced garlic, and chopped ginger for a few minutes until they are slightly tender but still crisp.
- Return the fried chicken pieces to the pan with the sautéed vegetables.Pour the prepared sauce mixture over the chicken and vegetables. Stir-fry for a couple of minutes until the sauce thickens and coats the chicken and veggies evenly.
- Garnish the Chilli Chicken with chopped spring onions and optional sesame seeds for added texture and flavor.
