Instructions
- Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set it aside.
- In the same pot, add chopped onion and minced garlic. Sauté until the onions are translucent. Add the sliced okra and cook for a few minutes until slightly tender.
- Return the browned beef to the pot. Add diced tomatoes, beef broth, tomato paste, paprika, ground cumin, ground coriander, cayenne pepper, salt, and pepper. Stir to combine.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, stirring occasionally, until the beef is tender and the flavors meld together.
- Taste the stew and adjust seasoning if needed. Add more salt, pepper, or spices according to your preference.
- Once done, remove from heat. Ladle the Okra Beef Stew into serving bowls. Garnish with chopped fresh parsley or cilantro.
