Equipment

  • mixing bowl
  • baking dish
  • oven

Ingredients

  • chicken
  • plain yoghurt
  • tandoori masala spice blend
  • lemon juice
  • vegetable oil or melted ghee
  • ginger-garlic paste
  • herbs and spices

Instructions

  • Rinse the chicken pieces and pat them dry with paper towels. Use a knife to make a few deep slashes or cuts in the chicken to help the marinade penetrate.
  • In a mixing bowl, combine the plain yogurt, tandoori masala spice blend, lemon juice, vegetable oil or ghee, ginger-garlic paste, ground cumin, ground coriander, paprika, turmeric powder, cayenne pepper, and salt. Mix well to form a smooth marinade.
  • Coat the chicken pieces thoroughly with the prepared marinade. Ensure the marinade gets into the cuts made on the chicken.
  • Cover the bowl with plastic wrap or transfer everything into a sealable plastic bag. Refrigerate and let the chicken marinate for at least 4 hours or preferably overnight for best results.
  • Preheat the oven to 425°F (220°C). Line a baking dish or tray with aluminum foil and lightly grease it.
  • Place the marinated chicken pieces on the prepared baking dish, leaving some space between each piece.
  • Bake in the preheated oven for about 25-30 minutes or until the chicken is fully cooked, juices run clear, and the surface is charred in spots. For better color, broil for the last 2-3 minutes.
  • Once done, remove the Tandoori Chicken from the oven. Garnish with fresh cilantro or serve with lemon wedges. Serve hot with naan bread, rice, or your choice of sides.
