Chicken Tikka Kebabs

- boneless chicken
- plain yogurt
- lemon juice
- herbs and spices
- lemon wedges
- salt and pepper
Instructions
- Cut the boneless chicken thighs or breasts into even-sized cubes. Pat them dry with paper towels to remove excess moisture.
- In a mixing bowl, combine the plain yogurt, lemon juice, vegetable oil, minced garlic, grated ginger, ground cumin, ground coriander, smoked paprika, ground turmeric, garam masala, cayenne pepper, and salt. Mix well to form a smooth marinade.
- Add the chicken cubes to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap or transfer everything into a sealable plastic bag. Refrigerate and let the chicken marinate for at least 2-4 hours, or preferably overnight for the best flavor.
- Preheat the grill to medium-high heat. If using wooden skewers, thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
- Grill the chicken kebabs for about 6-8 minutes on each side, or until they are cooked through and have nice grill marks. The internal temperature of the chicken should reach 165°F (74°C).
- Once cooked, remove the Chicken Tikka Kebabs from the grill. Garnish with chopped fresh cilantro or mint leaves.
- Serve hot with lemon wedges for squeezing over the kebabs.

- Adjust the amount of cayenne pepper according to your spice preference.
- You can also broil the Chicken Tikka Kebabs in the oven if a grill isn't available. Place them on a baking sheet lined with foil and broil, turning occasionally, until cooked through and charred in spots.
