Instructions
- In a large pot over medium heat, add olive oil or butter. Sauté the chopped onion and minced garlic until they become translucent and fragrant, about 3-4 minutes.
- Add sliced carrots and broccoli florets to the pot. Stir and cook for an additional 5 minutes, allowing the vegetables to slightly soften.
- Pour in the vegetable or chicken broth and water. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for about 15-20 minutes, or until the carrots and broccoli are tender.
- Once the vegetables are tender, use an immersion blender directly in the pot to blend the soup until smooth. If using a regular blender, allow the soup to cool slightly, then blend in batches, being cautious as hot liquids expand in the blender.
