Zucchini, like all squash, has its ancestry in the Americas, specifically Mesoamerica. However, the varieties of green, cylindrical squash harvested immature and typically called "zucchini" were cultivated in northern Italy, as much as three centuries after the introduction of cucurbits from the Americas.
This Italian Zucchini Stew is loaded with fresh garden-grown zucchini, tomatoes, ground beef, potatoes and green bell pepper. This delicious stew combines the freshness of zucchinis with the sweetness of bell peppers and the rich depth of tomatoes, creating a satisfying dish perfect for any occasion. Simple to prepare and it comes out with wholesome ingredients, this zucchini stew promises a nourishing and delicious dining experience that will warm both hearts and palates.

Ingredients
  

  • Medium zucchinis sliced into rounds or half-moons
  • Onion finely chopped
  • Garlic minced
  • Bell pepper diced
  • Olive oil
  • Vegetable or chicken broth
  • Dried thyme
  • Paprika
  • -Salt and pepper to taste
  • Fresh parsley or cilantro for garnish optional

Instructions
 

  • Assemble all ingredients
  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until it becomes translucent. Add minced garlic and cook for an additional minute.
  • Add the sliced zucchini and diced bell pepper to the pot.
    Sauté for about 5-7 minutes until they start to soften.
  • Incorporate the diced tomatoes and seasonings (thyme, paprika, salt, and pepper).
    Stir well to combine.
  • Pour in your chicken or vegetable broth and simmer for a few minutes until the zucchinis are softened.
  • Taste the stew and adjust the seasoning if needed.
  • Remove from heat. Garnish the zucchini stew with fresh parsley or cilantro if desired before serving.
