Delicious gizzard stew recipe

Gizzards are commonly served in the southeastern region of the United States and countries such as Haiti, Indonesia, Uganda, Cameroon, and Japan. Essentially, chicken gizzards are the stomach of a chicken (or any other fowl—and surprisingly all reptiles!). They are usually deep-fried and taste somewhat like liver, with a chewy consistency similar to the heart.

Ingredients

  • 1 pound chicken gizzards, cleaned and trimmed
  • 1 onion, finely chopped
  • 2 tablespoons olive oil or vegetable oil
  • 2 cloves garlic, minced

  • 1 carrot, diced

  • 1 can (14 ounces) diced tomatoes
  • 3 cups

    chicken or vegetable broth

  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  • Gather your ingredients at the chicken and let's get started
  • Grab your casserole dish or large pot and heat your olive oil over medium.
Add the chopped onion and sauté until it becomes translucent.
  • Add the minced garlic and chicken gizzards to the pot. Cook, stirring occasionally, until the gizzards are lightly browned.
  • Stir in the diced carrots, celery, and potatoes and any other vegetables of your choice. Cook for a few minutes until the vegetables begin to soften slightly.
  • Afterwards, add the diced tomatoes (with their juices), chicken or vegetable broth, dried thyme, paprika, salt, and pepper. Stir well to combine all the ingredients.
  • Then, bring the stew to a boil, then reduce the heat to low.
Cover the pot and let it simmer for about 1½ to 2 hours, or until the gizzards are tender.
Stir occasionally and check if additional liquid is needed; if so, add more broth or water.
  • Once the gizzards are tender and the vegetables are cooked through, taste the stew and adjust the seasoning if necessary to do so.
  • Make sure to serve the gizzard stew hot, garnished with chopped fresh parsley if you'd like. It pairs well with bread, rice, or mashed potatoes.
