The classic chicken stew has its roots in Portuguese cuisine. This dish popularized by the Syrian Christian families in Kerala is extremely aromatic and flavoursome. Check out the pretty simple recipe of rich and creamy chicken stew that pairs amazingly with breakfast items like appam, puttu and idiyappam.It's a hearty and comforting meal that often includes herbs, spices, and sometimes thickening agents like flour or cornstarch to create a thicker consistency. Chicken stew can be cooked on the stovetop, in a slow cooker, or in a pressure cooker, and it's often served with bread, rice, or potatoes.
Ingredients
- 3 chicken thighs, bone-in, skin-on
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrots, peeled and chopped
- 1 celery stalk, chopped
- 1 can diced tomatoes
- 1½ cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste

Instructions
- Gather all your ingredients
- Get you chicken and season the chicken thighs with salt and pepper.
- Heat olive oil in a large pot or casserole dish over medium-high heat.Brown the chicken thighs on both sides. After browning, remove them from the pot and set aside.
- After setting aside the chicken, In the same pot with the oil, add in the diced onion and cook until translucent. Add minced garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.
- Add the diced tomatoes with its juice and stir very well. Add the chicken broth, dried thyme, and dried rosemary. Allow the mixture to simmer for a few minutes.
- Return the browned chicken thighs to the pot. Cover and simmer on low heat for about 20-30 minutes or until the chicken is cooked through and tender.
- To those of us who prefer thicker stews, you can mix 1 tablespoon of flour with a little water to create a slurry and stir it into the stew for a few minutes.
- Once the stew is done, taste and adjust the seasoning with salt and pepper. Please feel free to serve the delicious chicken thigh stew hot, garnished with fresh herbs if you'd like.
