"Fricasé de Pollo," is a traditional Cuban stew featuring chicken stewed with tomatoes, onions, bell peppers, potatoes, olives, and aromatic herbs like oregano and cumin. This is a, flavorful dish and it reflects the diverse culinary influences found in Cuban cuisine, offering a taste of the country's rich gastronomic heritage. Let's get started......
Ingredients
- Chicken pieces (thighs, drumsticks, or a whole chicken cut into parts)
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup dry white wine (optional)
- 2 large potatoes, peeled and cut into chunks
- 1 cup green olives, pitted
- 2 bay leaves
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
Instructions
- Gather all ingredients
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set it aside.
- In the same pot, add chopped onions and cook until they turn translucent. Add minced garlic and cook for another minute.
- Stir in chopped bell peppers and cook for a few minutes until they start to soften.
- Add diced tomatoes (including the juice) and cook for a couple of minutes.
- Pour in chicken broth and white wine (if using), scraping the bottom of the pot to deglaze it.
- Return the browned chicken to the pot. Add potatoes, green olives, bay leaves, dried oregano, ground cumin, salt, and pepper. Stir to combine.
- Bring the stew to a simmer. Cover the pot and let it simmer for about 30-40 minutes, or until the chicken is cooked through and the potatoes are tender.
- Taste and adjust seasoning if needed.
- When done, remove the bay leaves.Serve the Fricasé de Pollo hot
