Ingredients

Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add pork chunks and brown them on all sides. Remove the pork from the pot and set it aside.
- In the same pot, add chopped onion, minced garlic, diced bell pepper, carrots, and celery. Sauté until the vegetables are softened.
- Return the browned pork to the pot. Add diced tomatoes, chicken or vegetable broth, paprika, dried thyme, salt, and pepper. Stir to combine.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1 hour until the pork is tender and the flavors meld together.
- Once the pork is tender, add the prepared seafood to the stew. Stir gently and continue to simmer for an additional 10-15 minutes until the seafood is cooked through.
- Remove the stew from heat. Ladle the pork and seafood stew into serving bowls. Garnish with chopped parsley. Serve hot with cooked rice or crusty bread.
