Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the pork chunks and brown them on all sides. Remove the pork from the pot and set it aside.
- In the same pot, add chopped onion and minced garlic. Sauté until the onions become translucent.
- Stir in diced carrots, celery, potatoes, and green beans. Cook for a few minutes until the vegetables start to soften. Add the browned pork back into the pot.
- Pour in the diced tomatoes and beef or vegetable broth. Add dried thyme, dried rosemary, salt, and pepper. Stir well to combine.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, stirring occasionally, until the pork is tender and the vegetables are cooked through.
- Once the stew is done, remove it from heat. Ladle the pork stew with vegetables into serving bowls. Garnish with chopped parsley. Serve hot with crusty bread or cooked rice, if desired.
