Flavorful Okra Chicken Stew

Ingredients

Instructions
- Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set it aside.
- In the same pot, add chopped onion and minced garlic. Sauté until the onions become translucent. Add ground cumin, paprika, ground coriander, turmeric powder, cayenne pepper, salt, and pepper. Stir and cook for about a minute until fragrant.
- Add sliced okra to the pot and stir to combine with the spices. Cook for a few minutes until the okra starts to soften. Then add the diced tomatoes (with their juices) and stir well.
- Return the browned chicken pieces to the pot. Pour in chicken broth or water, enough to cover the ingredients. Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for about 25-30 minutes until the chicken is cooked through and the okra is tender.
- Once done, remove from heat. Garnish the okra chicken stew with chopped cilantro or parsley. Serve hot over cooked rice or with bread.
