Equipment
- large skillet
- wooden spoon
- cutting board and knife
Ingredients
- chicken feet
- vegetable oil
- onion
- garlic cloves
- ginger
- tomatoes
- chicken broth
- cumin
- salt and pepper
- coriander
- tumeric
- paprika
- cilantro
Instructions
- Thoroughly clean the chicken feet, removing any outer skin or debris. Trim nails if necessary.
- Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened. Add minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Stir in diced tomatoes, ground cumin, ground coriander, turmeric powder, paprika, salt, and pepper. Cook for 3-4 minutes until the tomatoes begin to break down.
- Add the cleaned chicken feet to the pot and pour in chicken broth. Ensure the chicken feet are submerged in the liquid. Bring to a boil, then reduce heat to low, cover, and simmer for about 2 hours until the chicken feet are tender and the stew has thickened slightly. Stir occasionally.
- Once the chicken feet are cooked, remove the stew from heat. Ladle the stew into serving bowls. Garnish with chopped cilantro or parsley. Serve hot with cooked rice or bread, if desired
Notes
- To enhance flavors, consider adding bay leaves, cinnamon sticks, or chili peppers for added spice.
- Allow the stew to cool slightly before serving as it tends to thicken as it cools.
- Adjust spices according to taste preferences and desired heat level.
