Ingredients
  

  • 1 whole rabbit, cut into pieces
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1 cup red wine (optional)
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste

  • Chopped fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add rabbit pieces and brown them on all sides. Remove the rabbit and set it aside.
  • In the same pot, add diced onion and cook until translucent. Add garlic, carrots, celery, and mushrooms. Cook for a few minutes until vegetables start to soften.
  • Sprinkle flour over the vegetables and stir to coat. Cook for a minute to remove the raw taste of the flour.
  • Pour in the broth and red wine (if using), scraping the bottom of the pot to deglaze it.
  • Add the bay leaves, thyme, salt, and pepper. Return the rabbit pieces to the pot. Bring the stew to a simmer.
  • Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the rabbit is tender.
  • Taste and adjust seasoning if needed. Remove bay leaves.
  • Serve the rabbit stew hot, garnished with chopped fresh parsley.
