Irish stew is a traditional and beloved dish originating from Ireland. Ingredients
  

  • 2 pounds lamb shoulder or stewing lamb, cut into chunks
  • 4 large potatoes, peeled and cut into chunks
  • 3 carrots, peeled and sliced
  • 2 onions, chopped
  • 2-3 cups beef or vegetable broth
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2-3 sprigs of fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste

  • Chopped parsley for garnish (optional)

Instructions
 

  • Preheat your oven to 325°F (165°C).
  • In a large ovenproof pot or Dutch oven, melt the butter over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb and set it aside.
  • In the same pot, add the chopped onions and cook until they soften.
  • Sprinkle flour over the onions and stir to coat. Cook for a minute to remove the raw taste of the flour.
  • Return the browned lamb to the pot. Add potatoes, carrots, and thyme sprigs. Season with salt and pepper.
  • Pour enough broth over the ingredients to cover them.
  • Bring the stew to a simmer on the stovetop.
  • Cover the pot with a lid and transfer it to the preheated oven.
  • Let the stew cook in the oven for about 2 to 2.5 hours, or until the lamb is tender and the vegetables are cooked through.
  • Once done, remove from the oven. Taste and adjust seasoning if needed.
  • Serve the Irish stew hot, garnished with chopped parsley if desired. Enjoy this comforting and flavorful dish!
