Equipment

  • Pressure cooker
  • Knife and cutting board
  • mixing bowl

Ingredients

  • pork shoulder
  • cooking oil
  • onion
  • garlic
  • paprika
  • thyme
  • oregano
  • salt and pepper
  • vegetable broth

Instructions

  • Season the pork chunks with salt, pepper, paprika, dried thyme, and dried oregano. Toss to coat evenly.
  • Set the pressure cooker to sauté mode. Add cooking oil and heat it up.
  • Add chopped onions and minced garlic to the pressure cooker. Sauté until the onions are translucent and the garlic is fragrant.
  • Add the seasoned pork chunks to the pressure cooker. Sear the pork pieces on all sides until they're browned. This step helps to lock in flavor.
  • Pour in the chicken or vegetable broth into the pressure cooker. If using barbecue sauce, add it now for additional flavor.
  • Close and lock the lid of the pressure cooker. Set the pressure cooker to high pressure, and cook the pork for about 25-30 minutes. The exact time may vary depending on the size of the pork chunks and your pressure cooker model.
  • Once the cooking time is complete, allow the pressure to release naturally for 10-15 minutes. Carefully perform a quick release if needed, following your pressure cooker's instructions.
  • Open the pressure cooker carefully. Check the pork's internal temperature; it should reach at least 145°F (63°C) for safe consumption.
  • Remove the pork from the pressure cooker and let it rest for a few minutes. Shred or slice the pork, and serve it with your choice of side dishes or use it in tacos, sandwiches, or salads.
