Equipment

Ingredients
  

  • chicken pieces, skinless and bone-in2 tablespoons
  • vegetable oil
  • onion
  • garlic
  • ginger
  • large tomatoes
  • tomtoes paste
  • paprika
  • salt and black epper
  • cumin
  • cilantro
  • tumeric
  • green chilies

Instructions
 

  • Rinse and pat dry the chicken pieces. Season with salt and black pepper.
  • In a large pot or deep pan, heat vegetable oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
  • In the same pot, add chopped onions and sauté until translucent. Add minced garlic and grated ginger. Sauté for an additional 2 minutes until fragrant.
  • Stir in chopped tomatoes and tomato paste. Cook until the tomatoes break down and the mixture thickens.
  • Add turmeric powder, paprika, cumin powder, and coriander powder. Mix well to coat the ingredients with the spices.
  • Return the browned chicken to the pot, coating it with the tomato and spice mixture.
  • Add chopped green chilies and enough water to cover the chicken. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes or until the chicken is cooked through.
  • Taste and adjust the seasoning with salt and black pepper as needed. If you prefer more heat, you can add additional chopped green chilies.
  • Garnish the Chicken Rougaille with chopped fresh cilantro or parsley. Serve hot with rice, bread, or your preferred side.
