Ingredients
- chicken pieces, skinless and bone-in2 tablespoons
- vegetable oil
- onion
- garlic
- ginger
- large tomatoes
- tomtoes paste
- paprika
- salt and black epper
- cumin
- cilantro
- tumeric
- green chilies
Instructions
- Rinse and pat dry the chicken pieces. Season with salt and black pepper.
- In a large pot or deep pan, heat vegetable oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add chopped onions and sauté until translucent. Add minced garlic and grated ginger. Sauté for an additional 2 minutes until fragrant.
- Stir in chopped tomatoes and tomato paste. Cook until the tomatoes break down and the mixture thickens.
- Add turmeric powder, paprika, cumin powder, and coriander powder. Mix well to coat the ingredients with the spices.
- Return the browned chicken to the pot, coating it with the tomato and spice mixture.
- Add chopped green chilies and enough water to cover the chicken. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes or until the chicken is cooked through.
- Taste and adjust the seasoning with salt and black pepper as needed. If you prefer more heat, you can add additional chopped green chilies.
- Garnish the Chicken Rougaille with chopped fresh cilantro or parsley. Serve hot with rice, bread, or your preferred side.
