Chicken Sambar

Ingredients
- chicken, cut into piece
- mixed vegetables
- onion
- tamarind pulp
- tomatoes
- mustard seeds
- urad dal
- curry leaves
- oil
- salt to taste
Instructions
- Pressure cook toor dal with water until soft and mushy. Set aside.
- In a large pot, heat oil over medium heat. Add mustard seeds and urad dal. When the mustard seeds splutter and urad dal turns golden brown, add chopped onions and curry leaves. Sauté until onions turn translucent.
- Add chicken pieces and sauté until they change color and are no longer pink. Add chopped tomatoes and continue to cook until they are soft and mushy.
- Add mixed vegetables, tamarind pulp, and the ground sambar masala. Mix well and cook for a few minutes until the raw smell of the masala disappears.
- Pour in 4 cups of water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer until the chicken and vegetables are cooked through and tender.
- Add cooked toor dal to the pot. Stir well and let the sambar simmer for a few more minutes, allowing the flavors to meld together. Adjust the consistency by adding more water if necessary.
- Season with salt to taste. Garnish with fresh coriander leaves.Serve the Chicken Sambar hot with steamed rice, dosa, or idli.
