Ingredients
  

  • bone-in, skin-on chicken thighs
  • salt and black pepper
  • olive oil
  • red pepper flakes
  • garlic
  • onion, finely chopped
  • bell pepper
  • chicken broth
  • white wine
  • parsley
  • lemon wedes

Instructions
 

  • Season the chicken thighs and drumsticks with salt and black pepper. Dredge the chicken pieces in flour, shaking off any excess.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and brown them on all sides until golden. Remove the chicken from the skillet and set aside.
  • In the same skillet, add red pepper flakes and minced garlic. Sauté for a minute until fragrant. Add thinly sliced onion and bell peppers. Cook until the vegetables are soft and lightly caramelized.
  • Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Let the wine reduce by half
  • Return the browned chicken pieces to the skillet. Pour in the chicken broth, covering the chicken and vegetables. Simmer for 20-25 minutes, or until the chicken is cooked through and tender.
  • Add halved cherry tomatoes to the skillet. Cook for an additional 5 minutes, allowing the tomatoes to soften and release their juices.
  • Taste the sauce and adjust the seasoning with salt and black pepper if necessary. The sauce should be savory and slightly tangy.
  • Sprinkle fresh chopped parsley over the Chicken Scarpariello. Serve hot, garnished with lemon wedges for a burst of citrus freshness.
