Instructions
- Preheat the oven to 375°F (190°C).Lay out the chicken breasts on a clean surface. Carefully slice each chicken breast horizontally to create a pocket without cutting all the way through.
- Season the inside of the chicken breasts with salt and black pepper.In a skillet, heat olive oil over medium heat. Add minced garlic and chopped spinach. Cook until the spinach wilts. Remove from heat and let it cool slightly.
- In a bowl, combine the cooked spinach, shredded mozzarella cheese, grated Parmesan cheese, dried basil, and dried oregano. Mix well.
- Stuff each chicken breast with the spinach and cheese mixture, then secure the openings with toothpicks.
- In the same skillet, heat a bit more olive oil over medium-high heat. Sear the stuffed chicken breasts until golden brown on both sides, about 3-4 minutes per side.
- Transfer the seared chicken roulades to a baking dish. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
- In a saucepan, melt butter over medium heat. Add flour and whisk continuously to create a roux.Gradually pour in chicken broth, whisking constantly to avoid lumps. Bring to a simmer and cook until the sauce thickens.
- Reduce the heat to low and add heavy cream. Stir until well combined. Season the sauce with salt and black pepper to taste.
