Ingredients
  

  • 1 cup cooked chicken, shredded1/2 cup carrots, finely diced1/2 cup potatoes, boiled and mashed1/2 cup frozen peas, thawed1 small onion, finely chopped2 cloves garlic, minced1 tablespoon vegetable oil1/2 teaspoon ground white pepperSalt, to taste1 tablespoon soy sauce1 tablespoon oyster sauce1 tablespoon chopped fresh parsley

Instructions
 

  • In a pan, heat vegetable oil over medium heat. Add chopped onion and minced garlic. Sauté until fragrant and translucent.
  • Add shredded chicken, diced carrots, mashed potatoes, and thawed peas to the pan. Stir well to combine.
  • Season with ground white pepper, salt, soy sauce, and oyster sauce. Cook the mixture until the vegetables are tender and the flavors are well combined.
  • Remove the pan from heat and stir in chopped fresh parsley. Allow the filling to cool completely.
  • In a mixing bowl, combine all-purpose flour, eggs, milk, and salt. Whisk until smooth to create a thin crepe batter.
  • Heat a non-stick pan over medium heat and lightly grease it with butter. Pour a small amount of batter into the pan, swirling it to spread the batter thinly. Cook the crepe until set and lightly golden on both sides. Repeat until all the batter is used, stacking the cooked crepes on a plate.
  • Place a spoonful of the chicken filling on each crepe. Roll the crepe to encase the filling, forming a cigar-like shape.
  • Dip each rolled risole in beaten egg, then roll it in breadcrumbs, ensuring an even coating.
  • Heat vegetable oil in a deep fryer or a deep pan over medium-high heat. Carefully fry the risoles until golden brown and crispy. Remove and drain excess oil on paper towels.
  • Serve the crispy chicken risoles hot, optionally with your favorite dipping sauce.
