Classic Hong Kong Macaroni Soup

Ingredients
  

  • macaroni noodles
  • olive oil
  • garlic
  • celery stalk
  • carrot
  • zucchini
  • vegetable broth
  • tomatoes
  • parsley
  • thyme
  • basil

Instructions
 

  • Cook the macaroni noodles according to the package instructions in a separate pot of boiling salted water until al dente. Drain and set aside.
  • In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and continue to sauté for another minute until fragrant.
  • Stir in diced carrots, diced celery, and diced zucchini. Cook for a few minutes until the vegetables begin to soften.
  • Pour in vegetable or chicken broth. Add the diced tomatoes (with their juice). Bring the mixture to a gentle boil.
  • Add dried basil, dried thyme, salt, and black pepper. Stir well to combine the seasonings with the vegetables and broth. Let the soup simmer for about 10-15 minutes, allowing the flavors to meld together.
  • Add the cooked macaroni noodles to the soup. Stir well to combine. Let the soup simmer for an additional 5 minutes to allow the macaroni to absorb the flavors of the soup.
  • Taste the soup and adjust the seasoning with salt and black pepper if necessary.
  • Ladle the hot macaroni soup into bowls. Garnish each serving with freshly chopped parsley. If desired, sprinkle with grated Parmesan cheese before serving. Serve hot with crusty bread for a complete and satisfying meal.
